Virgin Mojito recipe

This classic cocktail can very easily taste of nothing if you don’t get the quantities right. Done well, you’re in a Copacabana beach bar, laughing with close friends. Done badly, you’re in your kitchen, grimly sipping 
mouthwash. This one, however, gets pretty close 
to the real thing.

Prep time: 5 minutes 

MAKES 

one 

INGREDIENTS 

  • A handful of fresh mint, stalks removed
  • Ice cubes
  • ½ tsp caramel syrup
  • ½ tsp sugar syrup
  • 50ml non-alcoholic distilled spirit
  • Juice of ½ lime
  • Sparkling water or soda water, to top up

METHOD 

  1. Put the mint leaves into a tall glass, reserving a small sprig to decorate. Use a muddler to lightly bash the leaves until they are broken up and smelling highly minty. Fill the glass to the top with ice cubes. Pour in the rest of the ingredients except the sparkling or 
soda water and stir.
  2. Top up to taste with sparkling or soda water and decorate with the reserved sprig of mint.
